A produ\u00e7\u00e3o de carne de aves, que representa aproximadamente um ter\u00e7o da produ\u00e7\u00e3o global de carne<\/b>\u00a0em todo o mundo, aumentou de forma exponencial nos \u00faltimos anos e \u00e9 uma realidade para os pr\u00f3ximos. A produ\u00e7\u00e3o de carne de frango somente pelo Brasil em 2022 foi na ordem de mais de 14,5 milh\u00f5es de toneladas, com quase 5 milh\u00f5es destas sendo para exporta\u00e7\u00e3o (ABPA, 2023).<\/li>\r\n \t<li><\/li>\r\n \t<li><b>Dentre os principais pontos que contrastam com a dimens\u00e3o da produ\u00e7\u00e3o av\u00edcola, a infec\u00e7\u00e3o por\u00a0<\/b><b><i>Salmonella sp. \u00e9<\/i><\/b><b>\u00a0um ponto sempre relevante<\/b>. Entre os mais de 2.500 sorovares de\u00a0<i>Salmonella<\/i>, v\u00e1rios foram identificados como os principais pat\u00f3genos para humanos e animais dom\u00e9sticos, incluindo\u00a0<i>Salmonella Typhimurium, Enteritidis, Typhi, Newport, Heidelberg\u00a0<\/i>e<i>\u00a0Paratyphi A\u00a0<\/i>(Si Hong et al., 2009). As salmonelas s\u00e3o bact\u00e9rias gram-negativas anaer\u00f3bicas facultativas em forma de bastonete, os tamanhos dos genomas de\u00a0<i>Salmonella<\/i>\u00a0variam entre os sorovares.<\/li>\r\n \t<li><\/li>\r\n \t<li><b>No caso da infec\u00e7\u00e3o em aves de produ\u00e7\u00e3o a Salmonela<\/b>\u00a0<b>pode causar doen\u00e7a cl\u00ednica ou infec\u00e7\u00e3o subcl\u00ednica tendo assim animais assintom\u00e1ticos que s\u00e3o muitas vezes referidos como portadores.<\/b>\u00a0A epidemiologia da salmonelose \u00e9 complexa. A alta densidade nos avi\u00e1rios, juntamente com a persist\u00eancia do microrganismo na \u00e1gua, ingredientes da ra\u00e7\u00e3o e cama, bem como em vetores biol\u00f3gicos no ambiente da granja, facilitam sua dissemina\u00e7\u00e3o.<\/li>\r\n \t<li><\/li>\r\n \t<li><i><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-155987 webpexpress-processed alignright\" src=\"https:\/\/avinews.com\/wp-content\/uploads\/2023\/05\/galinha-e-bacteria-salmonela-280x280.png\" alt=\"\" width=\"5\" height=\"5\" \/>Salmonella\u00a0<\/i>dos sorotipos\u00a0<i>Dublin, Pullorum, Gallinarum, Choleraesuis, Abortusovis<\/i>\u00a0e algumas cepas de\u00a0<i>Typhimurium e Enteritidis<\/i>\u00a0abrigam plasm\u00eddeos de virul\u00eancia que codificam genes necess\u00e1rios para a capacidade de causar doen\u00e7as sist\u00eamicas.
